Whole wheat-Paneer tikka quiche

ABOUT Whole wheat-Paneer tikka quiche RECIPE

A taste of summer, this quiche is a combinaton of Indian and Italian flavours and is perfect for dinner in the garden

Ingredients Serving: 5

  1. 250 g whole wheat flour
  2. 125 g butter
  3. 1/4 cup diced bell peppers
  4. 1)4 cup sliced onions
  5. 1/2 cup Cottage cheese
  6. 1/4 cup tomatoes chopped
  7. 1 table spoon pizza seasoning
  8. 1 tea spoon salt
  9. 1/2 tea spoon black pepper
  10. 1/2 cup thick curd
  11. 1/4 cup ready made pizza sauce
  12. 1/4 cup fresh cream
  13. 1tea spoon tandoori masala or chicken masala
  14. 1 cup of mixed cheese (parmesan,cheddar and mozrella)

Instructions

  1. To make the pastry, tip the flour and butter into a bowl, then rub together with your fingertips until completely mixed and crumbly. Add 8 tbsp cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 2 days. The pastry can also be frozen for up to a month.
  2. Roll out the pastry on a lightly floured surface to a round about 5 cm larger than a 25 cm tin. Use your rolling pin to lift it up, then drape over the tart case so there is an overhang of pastry on the sides. Using a small ball of pastry scraps, push the pastry into the corners of the tin. Chill in the fridge or freezer for 20 mins. Heat oven to 200C/fan 180C/gas 6.
  3. Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil. Bake the tart for 20 mins, remove the paper , then continue to cook for 5-10 mins until biscuit brown.
  4. Mix tandoori masala,salt and Paneer in a bowl and keep it aside for marination for an hour.
  5. Mix pizza sauce,fresh cream and pour it in a pie. Add marinated Paneer to it.
  6. Add all the chopped vegetables and scattered cheese to the pie.
  7. Sprinkle remaining 1/2 spoon of pizza seasonings.
  8. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, trim the edges of the pastry, then remove from the tin
