ABOUT Stuffed Aloo Kulche RECIPE

Love these stuffed kulchas. Compared to parathas they are healthier as they are not fried in ghee or oil. At home, you can bake them in the oven or use the tava.

Ingredients Serving: 5

  1. 3 cups - flour
  2. 1 tbsp - oil
  3. 1/3 tsp - baking soda
  4. A pinch of baking powder
  5. yogurt to knead the flour
  6. salt to taste
  7. For the filling:
  8. 3 - potatoes boiled and mashed
  9. 2 tbsp - chopped green coriander
  10. 1 tsp - chopped green chillies
  11. 1/2 tsp - chaat masala
  12. salt to taste
  13. For garnishing :
  14. Chopped coriander leaves
  15. Nigella seeds/kalonji as required


  1. Mix together flour, salt, baking powder and baking soda. Add oil and mix well. Knead with yogurt. Cover with clingfilm and rest for 2 hours.
  2. Mix together mashed boiled potatoes, green chillies, green coriander, chaat masala and salt.
  3. Heat the tava. Make balls of the dough and roll. Place potato filling in the middle. Pat it down and slowly roll out the kulchas.
  4. Sprinkle some chopped coriander and Nigella seeds on top and press down well so that they don’t fall off. Put on a tava.
  5. Roast both sides. Add some oil and fry till evenly browned.
