Ingredients to make Strawberry platter

  • 190g unsalted butter, softened
  • 1 cup (220g) caster sugar
  • 2 teaspoons vanilla extract
  • 1/4 cup strawberries pulp
  • 2 1/3 cups (350g) self-raising flour, sifted
  • 1 cup (250ml) milk
  • 220g white chocolate
  • 1 cup (250ml) thickened cream
  • 1 cup desiccated or shredded coconut
  • Strawberry compote
  • 3 g gelatin
  • 300 g of chopped strawberries
  • 15 g glucose
  • 80 g sugar
  • Squeeze of lemon juice
  • 12 g pectin

How to make Strawberry platter

  1. Wash the strawberries and cut into large chunks. Transfer to a medium saucepan add glucose,And cook until the mixture comes to a boil.
  2. Mix sugar with pectin and add to the pot to mixing. Add the lemon juice, bring to a boil,
  3. Reduce heat and continue to cook for another about 3 minutes while stirring and bubbling easy , the mixture is thick jam.
  4. Dissolve the gelatin and add in. Cool slightly.
  5. Method for lamintons-
  6. Preheat the oven to 180°C. Grease and line a 20cm-square cake pan.
  7. Beat butter and sugar in a bowl for 2 minutes until light. Add 1 teaspoon vanilla.
  8. Add eggs one at a time, until just combined. In 3 alternating batches, add flour and milk, strawberries pulp and combine.
  9. Pour into pan and bake for 35 minutes until a skewer inserted in centre comes out clean.
  10. Cool for 5 minutes, then turn onto a rack to cool completely.
  11. Step-2
  12. Meanwhile, stir chocolate, cream and remaining vanilla in a heatproof bowl over simmering water until smooth (don't let the bowl touch water).
  13. Chill for 20 minutes to thicken. Spread this icing over the cake, then sprinkle top and sides with coconut.
  14. Plating- Pour strawberries compotr on plate, place some Leamington decorate with chocolate of your choice.
