ABOUT Tuna - Black chickpeas hummus stuffed donuts RECIPE

Delicious donuts stuffed with creamy hummus prepared using Tuna fish and black chickpeas.

Ingredients Serving: 3

  1. For stuffing :
  2. 1 cup Black chickpeas
  3. 1 tsp Lemon juice
  4. 3 garlic pods
  5. 1 cup Olive oil + extra to get creamy texture
  6. 1/4 Cup Roasted Sesame seeds
  7. 2 cans Tuna fish in oil
  8. Salt to taste
  9. For Donuts :
  10. 1 1/2 All purpose flour
  11. 1 egg
  12. 1/2 Cup Milk ( Luke warm milk )
  13. 1/2 tsp Salt
  14. 1 1/2 tbsp sugar
  15. 1 Tbsp Yeast ( I have used instant yeast )
  16. 2 tbsp olive oil
  17. Oil for frying

Instructions

  1. For Tuna - Black chickpeas Hummus :
  2. Wash and soak the black chickpeas over night.
  3. Drain the water and pressure cook it for 4 whistles by adding little water.
  4. Once done, cool the chickpeas and drain the water.
  5. Transfer the drained chickpeas to a mixer jar along with roasted sesame seeds, lemon juice, garlic pods and the required amount of salt.
  6. Blend the mixture and add olive oil while grinding to get a smooth texture.
  7. Once done, transfer the hummus in a bowl and add tuna fish along with the oil.
  8. Mix well and transfer the mixture to a piping bag and keep aside or refrigerate.
  9. For Donuts :
  10. Mix luke warm water, sugar and yeast in a small bowl and keep aside till it turns frothy.
  11. Beat egg using fork and add it to the yeast along with oil and salt. Mix well.
  12. Sieve the measured all purpose flour and add the yeast mixture to it.
  13. Knead well till the dough becomes soft.
  14. Once done, grease with little oil, cover it with cling foil and keep aside for an hour or till the volume of dough doubles.
  15. Once it gets doubled, punch the air out from dough and knead again for 10 minutes.
  16. Divide the dough into two parts.
  17. Take one part of dough and roll it to 1 inch thickness using rolling pin.
  18. Using round shaped cookie cutter, cut the rolled dough and keep aside.
  19. Repeat the process for the remaining dough and let it rise again for 30 minutes.
  20. Now heat sufficient oil for frying and deep fry the donuts in batches in a medium flame.
  21. Once done, drain the excess oil using kitchen tissue and keep aside.
  22. To serve :
  23. Take one doughnut, give a small cut and stuff the tuna - black chickpeas hummus using piping bag.
  24. Repeat the process for the remaining donuts and serve.
