Ingredients to make Cranberry Lima beans Pulao

  • 1 cup Basmati rice
  • Half cup Lima beans
  • Half cup chopped carrots and beans
  • Half cup chopped potatoes
  • Pinch of saffron
  • Half cup cranberries and cashews
  • Half cup chopped onion
  • 3-4 green chillies
  • 2 spoons cumin
  • Mixed spices cardamom, javantri, star anise and bay leaf
  • 2 spoons ghee
  • 3-4 spoons oil
  • 3 spoons yoghurt
  • Few cloves
  • salt to taste

How to make Cranberry Lima beans Pulao

  1. Cook the basmati rice in a rice cooker with the saffron
  2. Take a kadai and heat oil add the spices and sauté for a minute
  3. Add the onions and vegetables and sauté for 5 minutes till the vegetables are semi cooked
  4. Take a blender and add chillies and curd with few cardamom and cloves
  5. Add this to the vegetables and cook for 5 minutes until the water is absorbed , add the salt at this stage
  6. Add the rice and sauté well
  7. Sauté some ghee and add the cranberries and cashews
  8. Add to pulao and serve
  9. Serve with raitha

Sweetness of the cranberries and the buttery taste of Lima beans makes this dish delicious
