ABOUT Mini Dark Chocolate Cheesecakes RECIPE

Dark, divine, sinful, creamy, chocolaty and as simple as can be, these Mini Dark Chocolate Cheesecakes are just the answer for chocolate cravings of all types. If you're looking for a quick bake ahead sweet something for the one you love, look no further. Recipe minimally adapted from Ruchira @thegreatcookaroo.com. This is my to go recipe.

Ingredients Serving: 8

  1. Biscuit base
  2. 150 g digestive biscuits
  3. 30 g cocoa powder
  4. 20 g organic jaggery granules
  5. 50 g butter, chopped, chilled
  6. Dark Chocolate Filling
  7. 200 g dark couverture chocolate melted
  8. 150 g cream cheese
  9. 150 g mascarpone
  10. 30 g cocoa powder
  11. 3 eggs
  12. 1 tsp pure vanilla extract
  13. 90 g organic jaggery granules
  14. Topping
  15. Fresh strawberries
  16. Dark chocolate flakes
  17. Fresh mint
  18. Cocoa powder

Instructions

  1. Biscuit base
  2. Whiz the biscuits, brown sugar and cocoa in food processor until you get a fine meal.
  3. Add butter,whiz again to mix. Press into individual 2" baking rings {or 1 8″ loose bottom tin}
  4. Chill in the freezer while you get the filling ready, and the oven preheats.
  5. Dark Chocolate Filling
  6. Preheat oven to 160C.
  7. Place all ingredients of the filling in bowl of food processor, and blend well to mix, 1-2 minutes on medium speed.
  8. Pour into crust, and bake for 30 minutes hour. Leave to cool in the oven, then cover and chill for 4-6 hours, better overnight.
  9. Topping
  10. Gently push out from ring molds/baking tin, and plate.
  11. Dust with cocoa powder, top with diced strawberries and dark chocolate flakes. Garnish with mint. Serve cold, or leave at room temperature for 30 minutes before serving.
