Ingredients Serving: 2

  1. 100gms Hakka noddles
  2. 1/2 cup boiled and shredded chicken
  3. 1 carrot juliennes
  4. 1/2 cup French beans juliennes
  5. 1/2 cup cabbage finely sliced
  6. 4 garlic pods finely chopped
  7. 2 green chillies cut vertically
  8. 1 medium sized onion sliced
  9. 1 capsicum sliced
  10. 2tbs tomato sauce
  11. 1tsp chilli sauce
  12. 1tsp soya sauce
  13. 1tsp vinegar
  14. 2+1tbs cornflour
  15. 1 Cup water
  16. Salt and pepper to taste
  17. 2tsp oil

Instructions

  1. Boil the Hakka noddles for 2-3 mins.
  2. Drain the water and apply 1tbs of cornflour. Deep fry.
  3. Blanch carrot and beans and keep aside.
  4. Take a wok heat 2tsp oil. Add onion and garlic and fry for 2mins or until raw smell goes.
  5. Add shredded chicken and fry for 2-3mins.
  6. Add cabbage and sauté and fry until little soft.
  7. Add carrot and beans, saute and fry for 2-3mins.
  8. Add all the sauces mentioned above and cook in slow flame for 2-3mins.
  9. Meanwhile mix 2tbs cornflour in half a cup of water and blend well.
  10. Add the cornflour mixture to the wok, season with salt and pepper.
  11. Add little more water if required and cook for 3-4mins until the gravy thickens.
  12. Serve a portion of fried noddles with 2 ladle of gravy and a fried egg.
