Ingredients Serving: 12

  1. All purpose flour 1 3/4 cups
  2. White granulated sugar 1/2 cup
  3. Unsweetened Cocoa Powder 1 Cup
  4. Baking Powder 1 1/2 Teaspoon
  5. Baking Soda 1 1/2 Teaspoon
  6. Salt 1/2 teaspoon
  7. Milk 1 cup
  8. Eggs 2
  9. Extra Virgin Olive Oil 1/2 Cup
  10. Vanilla essence 2 Teaspoons
  11. Hot water 1/2 cup
  12. Heavy Whipping Cream 1 cup
  13. Powder sugar 1/2 Cup

Instructions

  1. Preheat oven to 350 degree Fahrenheit.
  2. Sieve dry ingredients like all purpose flour, White granulated sugar, baking powder, baking soda and 3/4th cup cocoa powder in a big bowl.
  3. In other bowl, add in eggs, milk, oil and vanilla essence.
  4. Beat for about 2 minutes using electric beater on medium speed.
  5. Cut and fold the sieved dry ingredients into this wet mixture. Make sure no lumps are formed.
  6. Add hot water and mix again.
  7. Line up 9 inch cake pans (I have used 2) using parchment paper. Or you can also grease them with butter .
  8. Then pour in the prepared cake batter and bake in preheated oven for about 25 minutes or until toothpick when inserted in the center comes out clean.
  9. Keep it for cooling.
  10. For chocolate frosting : Take heavy whipping cream and sugar in a bowl and start beating initially at low speed and gradually increase the speed .
  11. Keep beating until you get soft peaks.
  12. Add remaining cocoa powder and continue beating till stiff peaks are formed.
  13. Once you get stiff peaks, stop beating .
  14. Once the cakes are nicely cooled down, remove out the parchment papers from the cakes.
  15. Spread some frosting over one of the cakes and place the other one on top and continue to frost them till they are nicely covered from top and sides.
  16. And you are all set with your delicious Thanksgiving dessert. Serve them and enjoy.
