ABOUT Strawberry Dark Chocolate ganache Eclairs RECIPE
Eclair is a French oblong pastry .The contrasting flavors of dark chocolate and strawberry whipped cream make it a impressive dessert for special occasion.

Ingredients Serving: 6
Ingredients for Eclairs :
1/2 cup all purpose flour
1/2 teaspoon caster sugar
1/4 teaspoon salt
1/4 cup unsalted butter, cut into pieces
1/2 cup water
2 large eggs, lightly beaten
Ingredients for Dark Chocolate Ganache :
1 cup grated dark chocolate
¼ cup heavy cream
Pinch of salt
Strawberry whipped cream :
¼ cup heavy cream
6 tbsp strawberry jam
For Garnish :
Few strawberries
Few mint leaves
Instructions
Method for making Eclairs-
Preheat oven to 200 degrees C and place rack in center of oven
Line a baking sheet with parchment paper .
In a bowl sift or whisk together the flour, sugar and salt.
Place the butter and water in a heavy saucepan over medium high heat and bring to a boil.
Remove from heat and add flour mixture and mix by cut and fold method.
Return saucepan to the heat and stir constantly until the dough comes away from the sides of the pan and forms a thick smooth ball (about 1-2 minutes).
Transfer the dough to dry container and allow to cool for 15 mins , once the dough is lukewarm start adding the lightly beaten eggs (dough will separate and then come together) and continue to mix until you have a smooth thick paste.
Pipe dough onto the baking sheet, to form eclairs ,keep a distance between each of them.
Bake for 10 minutes at 200 C , then lower down the temperature to 190 C and bake for 25 to 35 minutes or until the shells are light golden in color .
Turn the oven off,and allow the eclairs to cool in the oven for 5 mins leaving the door of oven half open
Take out eclaris out of the oven and poke a couple of holes in each puff and let the shells completely cool (and dry out)
Method for Strawberry whipped cream :
Whip chilled heavy cream to stiff peaks .
Add in strawberry jam ,and mix by cut and fold method.
Method for Dark chocolate ganache :
Heat heavy cream in a saucepan.
In another bowl add grated dark chocolate and pinch of salt.
Pour boiling cream over the chocolate and allow to stand for 5 mins.
Stir with a whisk until smooth.
keep in freezer to cool for 15 mins.
Assembly :
Make 2-3 small holes on the bottom of each eclairs , so that strawberry whipped cream can be filled in.
Fill a pastry bag with strawberry whipped cream with small round nozzle.
Fill the eclairs with strawberry whipped cream through the holes made at base of eclairs.(do this carefully as whipped cream should not ooze out).
Pipe out dark chocolate ganache on top of Eclairs .
Garnish with strawberry slices and fresh mint leaves.
