Ingredients Serving: 5

  1. Fresh Strawberry fruit slices-1 cup
  2. Whole wheat flour-1 cup
  3. Baking Powder-1/2 tsp
  4. Baking soda -1/2 tsp
  5. Salt -1/2 Tsp
  6. Oil-1/4 cup
  7. Vanilla extract-1/2 tsp
  8. Powdered sugar-2/3 cup
  9. Jaggery-2 tbsp
  10. Seedless black grapes-1 cup
  11. Water-3 tbsp
  12. Brown sugar-1/4 cup
  13. Butter-2 tbsp chilled

Instructions

  1. Preparation of grape concentrate:
  2. Clean grapes well with salt and water. Take water and Jaggery, melt it.
  3. Add whole grapes to this, start boiling on low flame until the grapes split open.
  4. Cool this and puree it. Keep aside for further use. Concentrate puree of 3/4 cup is used for batter
  5. Preparation of caramel:
  6. Preheat the oven at 180℃ for 5 mins.
  7. Take the baking tin, add brown sugar and butter. Keep this in oven until sugar melts and caramalizes.
  8. Now take this out and place the thick strawberries slice on this. Keep aside.
  9. Preparation of cake batter:
  10. Sieve together whole wheat flour, baking powder and baking soda, salt.
  11. Take grape concentrate, oil, powdered sugar and vanilla essence in a bowl and mix well.
  12. Fold the dry ingredients into the wet ingredients, don't over mix it.
  13. Pour this into baking tin over the caramel and strawberry slices.
  14. Bake in preheated oven at 180℃ for 35 to 40 mins.
  15. Remove from the oven, loosen the sides and place it upside down on tray to cool and decorate with cashews. Extra strawberry caramel can be poured on this.
  16. Serve after it cools down
