ABOUT Stuffed Capsicum RECIPE

A perfect vegetarian meal that is incredibly filling and yummy.

Ingredients Serving: 4

  1. 5 medium Capsicum or Bell peppers
  2. 3 medium boiled and mashed potatoes
  3. 1 small Red capsicum, chopped
  4. 1 cup crumbled paneer
  5. 1 small onion chopped
  6. 1/2 tsp haldi
  7. 3/4 tsp Red chili powder
  8. 2 tsp coriander powder
  9. 1 tsp Roasted cumin seeds powdered.
  10. Coriander leafs - 1/2 cup
  11. Salt to taste

Instructions

  1. Heat oil in a pan, add chopped onions, red capsicum and saute for 2 minutes until tender. Add crumbled paneer and mix.
  2. Add in mashed potatoes and all the spices one by one. and mix until well blended.
  3. Add chopped coriander leafs
  4. Stir and adjust seasonings.
  5. Allow it to cool down completely before stuffing.
  6. Wash and clean capsicum.
  7. Using a sharp knife cut the top off...
  8. Run a knife all around the capsicum and cut its inner part.
  9. Hollow capsicum is ready to be stuffed. Sprinkle some salt on the inside and microwave it for 2-3 minutes. It will reduce the cooking time in half
  10. Spoon by spoon fill capsicum with the potato mixture.
  11. Stuff them tightly.
  12. You can cook the same in Tawa, OTG and Oven
  13. I am baking mine in an OTG oven.
  14. When cooked from one side, turn them upside down and cook for 20 -30 minutes.
  15. Garnish with some shredded paneer and serve hot.
