ABOUT Chocolate And Beetroot Brownies RECIPE

Sinful Chocolate and Beetroot Brownies. Dark chocolate. Ribbons of gorgeous red beetroot. Spiked with the warmth of freshly grated ginger.

Ingredients Serving: 10

  1. 125 g plain flour
  2. 200 g 70% dark chocolate coarsely chopped
  3. 200 g beetroot grated
  4. 4 Eggs
  5. 150 g unsalted butter
  6. 125 g brown sugar
  7. 2 tbsps unsweetened cocoa powder
  8. 2 tsps baking powder
  9. 2 tbsps ginger grated
  10. Pinch of salt
  11. Little butter to grease the tin
  12. Little cocoa powder to dust the brownies

Instructions

  1. Pre-heat the oven at 170C.
  2. Line a 20 cm square cake tin with parchment paper, grease generously with butter. Keep aside.
  3. Add the butter and chopped chocolate shards to a bowl. Place the bowl over a pan of boiling water, stir till the chocolate melts and gets incorporated into the butter. Keep aside, allow to cool down.
  4. Sift the flour, cocoa powder, baking powder and salt to aerate the dry mixture. Keep aside in a bowl.
  5. In another bowl, whisk the eggs and sugar till light and fluffy. Into this, fold in the melted chocolate gently with a wooden or rubber spatula.
  6. In batches of a couple of spoonfuls, add the the dry mixture to the wet egg-chocolate mixture and gently mix.
  7. Finally fold in the grated beetroot and ginger.
  8. Pour the batter into the greased cake tin and bake for 30-35 minutes till it is just set but still slightly gooey in the center.
  9. Allow to cool and dust with cocoa powder. Cut into squares and serve.
