No Bake Dragon Fruit Jam Tarts

Ingredients to make No Bake Dragon Fruit Jam Tarts

  • For the Tart Crust
  • 10 dates, seedless
  • 7 digestive biscuits
  • 2 tablespoon melted butter
  • For the Dragon Fruit Jam
  • ½ dragon fruit flesh, scooped
  • 2 teaspoon sugar
  • 1 teaspoon lime juice
  • Topping
  • Sliced strawberries

How to make No Bake Dragon Fruit Jam Tarts

  1. For the Tart Crust
  2. Take dates and digestive biscuits in a mixer/grinder and grind till you get a smooth mixture.
  3. Now take the mixture in a bowl and gradually add 2 tablespoon melted butter and mix well until the mixture resembles a dough.
  4. Line tart moulds with parchment paper. Divide crust between the moulds and press firmly using your hands to form a uniform crust. Press it more in the centre with your thumb to make space for our filling.
  5. Put in the freezer section of the refrigerator for about 10-15 minutes.
  6. For the Dragon Fruit Jam
  7. Cut the dragon fruit into two halves and scoop out the flesh using a spoon. Take scooped flesh in a mixer/grinder and blend to a pulp.
  8. In a thick bottomed non-stick pan, combine dragon fruit pulp and sugar. Cook on a medium flame and simmer until it has a thick jam like consistency. Keep on stirring occasionally. This will take about 20-25 minutes.
  9. Once you notice that it has begun to thicken, add lemon juice to it. Stir well and cook for about a minute.
  10. Remove from flame and allow it to cool.
  11. Assembling
  12. Take out the prepared tarts from the refrigerator.
  13. Put about a spoonful of dragon fruit jam on it.
  14. Garnish with sliced strawberry.
  15. Serve chilled.

My Tip:

You can also arrange chopped strawberries over the tarts. Keep the tarts refrigerated till you are ready to assemble.
