ABOUT Banana Fritters (Ethakka Appam) RECIPE

Ethakka Appam is an extremely popular evening snack item in Kerala. They are generally made using ripe plantains which are coated with the flour and deep fried in hot oil. You can make them more delicious using overripe plantains.

Ingredients Serving: 3

  1. 2 overripe plantains (Nendrapazham)
  2. 1/2 Cup whole wheat flour
  3. 2 teaspoons rice flour
  4. 1 tablespoon sugar
  5. A small pinch turmeric powder
  6. 1/8 teaspoon cardamom powder
  7. 1/4 teaspoon black sesame seeds
  8. Salt to taste
  9. Coconut oil
  10. Water as required

Instructions

  1. Combine the flours, turmeric powder, cardamom powder, black sesame seeds and salt in a deep bowl. Add water little by little to form a smooth batter with semi thick consistency. Set aside.
  2. Peel the plantain and cut into half. Slice the halves into 4 thin pieces vertically. Repeat the same procedure for the remaining one.
  3. Dip the plantain slices in the batter until they are coated well with the batter.
  4. Heat oil in a thick bottom pan. The oil should be really hot, but not smoking hot. Add in the plantain slices one by one into the oil and fry until golden brown turning the sides in between. Drain on paper towels.
  5. Serve the crispy ethakka appam with tea.
