Ingredients to make Hinger kochuri or hing ki kachori

  • For dough:1 cup all purpose flour
  • 1 cup wheat flour
  • salt
  • oil
  • water
  • For stuffing:1 cup urad dal
  • ginger chopped 1 inch
  • Green chilies
  • Hing or asafoetida 1/2 tsp
  • sugar
  • Nigella seeds 1 tsp
  • fennel seeds 1/2 tsp
  • For potato sabzi:potato 2 big
  • 1 tomato
  • hing 1/2 tsp
  • Green chilies
  • salt
  • turmeric Powder
  • Mustard oil
  • cumin seeds

How to make Hinger kochuri or hing ki kachori

  1. Make a semi soft dough using little oil,salt,water and the flours.
  2. Keep it covered for 30 mins
  3. Soak the dal for 2 hrs
  4. Then grind it with ginger and green chili using very minimum water
  5. Heat oil in a non stick pan
  6. Add nigella seeds,fennel seeds and hing or asafetida one by one.
  7. Then add the coarsely ground urad dal and fry for some time.
  8. Add salt and sugar to taste.
  9. Let it cool.
  10. Make equal balls from the dough
  11. Put some stuffing inside the balls and roll out like puri.
  12. Deep fry them
  13. For the potato curry
  14. Heat mustard oil.add cumin seeds
  15. Then add hing or asafetida
  16. Add grated ginger
  17. Then add the chopped potatoes.
  18. Add salt and turmeric powder
  19. Add chopped tomatoes.
  20. Cook for some time
  21. Add water
  22. Cook covered
  23. Break some potatoes for thick consistency
  24. Add few slit green chillis
