ABOUT Brinjal Rice/ Vangi Bhath RECIPE

Brinjal Rice is a delicious one pot meal. It is a combination of eggplant and rice combined with indian spices and served with coconut chutney.

Ingredients Serving: 2

  1. 2 brinjal cut into cubes
  2. 2 cups cooked rice
  3. 1/2 cup peanuts
  4. 1 medium onion chopped
  5. 2 tbsp vangi bhath masala
  6. 2 to 3 tbsp tamrind extract
  7. 1 tsp red chilli powder
  8. 1/2 tsp turmeric powder
  9. 1 tsp coriander powder
  10. 1/4 tsp channa dal
  11. 1/4 tsp urad dal
  12. 1/4 tsp mustard seeds
  13. 2 dry red chillies
  14. A pinch of hing
  15. 10 to 15 curry leaves
  16. Oil as required
  17. Salt to taste

Instructions

  1. Take a broad pan and heat oil. Add channa dal, urad dal and peanuts, when they start to brown, add in the dry red chilli, mustard seeds, curry leaves and hing.
  2. Once they start to splutter, add in the chopped onion and fry till it turns golden brown in colour.
  3. Then add red chilli powder, turmeric, coriander powder, vabgi bhath masala, tamarind extract and brinjals and cook till the brinjals are well cooked.
  4. This could take about 5 to 6 minutes. Then add the cooked rice and mix it well.
  5. Vangi Baath is ready to be served! Serve hot with Coconut Chutney and Papad.

You could use sambar masala if you don't have vangi bath masala... It's almost similar
