ABOUT Sorse Pabda/Pabo Catfish in Mustard Sauce RECIPE

The Pabda is also known as Pabo Catfish in English. It is a very soft and delicate fish with the most amazing flavour. There are many ways of cooking the Pabda but my favourite is the Sorse Pabda.

Ingredients Serving: 4

  1. 4-5 Pabda fish
  2. Salt and turmeric to apply to the fish
  3. 1 potato cubed
  4. 1 large tomato sliced
  5. 2 green chillies
  6. 1 tsp Nigella seeds/onion seeds/kalonji
  7. 5 tbsp mustard seeds
  8. 2 tbsp poppy seeds
  9. 1 green chiili
  10. 1 tsp salt
  11. 1 tsp turmeric powder
  12. cup mustard oil

Instructions

  1. Apply salt and turmeric to the fish and let it marinate for half an hour.
  2. Soak the mustard seeds and poppy seeds for half an hour. Grind to a smooth paste along with the 1 green chilli and some salt.
  3. Heat the mustard oil and fry the fish. Keep aside. The oil has to be smoking hot and the fish has to be fried at a high flame so that the skin gets fried quickly.
  4. Next, add the kalonji and 2 green chillies to the oil. Then the cubed potatoes and fry well. Add in the sliced tomato and cook till the tomato becomes soft. Now add the mustard paste, along with turmeric powder and salt.
  5. Saute till the oil separates. Then pour in one cup of water and bring it to a boil.
  6. Simmer for some time, then put in the fried fish. Cover with a lid and cook for 8 minutes.
  7. After this time, check the seasonings and adjust as per your taste.
