Instant Bhatura

Ingredients to make Instant Bhatura

  • all purpose flour (Maida)-3 cups
  • semolina (Sooji)-3tbsp
  • salt-2tsp (or to taste)
  • Cooking oil-2tbsp
  • Carbonated water/Soda water-325 to 350 ml
  • oil- For Deep frying and Greasing

How to make Instant Bhatura

  1. Take All purpose flour, semolina, salt and 2 tbsp cooking oil in a mixing bowl. Mix well all the ingredients.
  2. Gradually add soda water to the mixture above and knead into a soft dough. Do not add all the soda water in one go. In the end if the dough feels too sticky, apply some oil on your palms and knead once again.
  3. Apply some oil on the surface of bhatura dough and keep it in any covered container for atleast 30-40 minutes.
  4. After 30-40 minutes waiting, bhatura dough would be ready. Apply some oil on palms and make flat balls out of dough. Keep these flat balls aside.
  5. Heat oil in a heavy bottomed pan for frying. Apply some oil on the dough ball. Roll it into 5-6" inch circle.
  6. Gently lift the circle from the rolling board and slip it into frying pan.
  7. With light strokes, press the centre of the bhatura with spatula while frying. This will help in puffing the bhaturas.
  8. Let it fry on medium heat and once it starts puffing, turn it other side.
  9. Fry till bhatura is puffed or golden brown spots appear on the surface. Place it on tissue paper for draining excess oil if any.

My Tip:

1. The soda water used in kneading should have its fizz intact. Try to open a fresh bottle when kneading the dough. 2. Please be quick when kneading the dough using soda water. 3. The soda water used should be at room temperature.
