Ingredients Serving: 6

  1. Wholewheat flour 1 cup
  2. All purpose flour 1 cup
  3. Sugar 3/4 cup
  4. Butter 100g
  5. Egg 1
  6. Vanilla essence 1 tsp
  7. Salt 1/2 tsp
  8. Chocolate chips 100g
  9. Fresh cream 1/2 cup
  10. Chocolate (grated) 1 cup
  11. Cherries or berries, mint leaves for garnishing

Instructions

  1. Take 1 cup grated chocolate in a bowl.
  2. Warm the cream in a sauce pan.
  3. Now slowly pour the warm cream over the grated chocolate.
  4. Let it stand for a minute.
  5. Then mix well to dissolve the chocolate completely.
  6. Keep this ganache aside to be used as filling later.
  7. To prepare the cookie jar dough, sieve the flours and salt together. Keep it aside.
  8. Whisk together sugar and butter until creamy.
  9. To this, add the egg and blend again.
  10. Add in the vanilla essence and mix again.
  11. Now slowly add the flour mixture to this and blend well.
  12. Add in the chocolate chips and give a gentle mix.
  13. Now freeze the dough for 15 minutes (or refrigerate for at least half an hour).
  14. Then take the dough out.
  15. Roll the dough out to the moulds (I made the moulds out of paper cup and foil).
  16. Roll out circle shapes too for the lids.
  17. Now place them on a baking tray lined with parchment paper.
  18. Now freeze this cookie dough for 10 minutes.
  19. Preheat the oven to 170 degree centigrade.
  20. Bake for 20 minutes
  21. Once it cools down completely, take them out of the mould carefully.
  22. Then fill the cookie tins with the prepared chocolate ganache.
  23. Garnish with berries or cherries, and mint leaves.
