Mango Sago Pudding

Ingredients to make Mango Sago Pudding

  • mango pulp - 1 cup
  • sabudana/ Sago - 1/4 cup
  • Milk - 3 cups
  • sugar - 2 tsp adjust according to preference
  • pistachios - slivered for garnishing

How to make Mango Sago Pudding

  1. Wash and soak sabudana/sago in water for about an hour
  2. In a pot bring lots of water to boil and add the soaked sago. Boil till translucent i.e. for 6-8 minutes
  3. Strain and wash again under cold running water to remove the starch. Keep aside
  4. Meanwhile boil the milk till it reduces to half. Bring it to room temperature
  5. In a mixer add mango pulp, reduced milk and sugar and make a smooth puree
  6. Now pour it in a mixing bowl and add the sabudana/sago. Mix well
  7. Adjust the consistency desired by adding more milk
  8. Place it in individual serving bowls and garnish with pistachios. Serve chilled

My Tip:

Alphonso mangoes gives the best results
