Ingredients Serving: 8

  1. For dosa batter
  2. 1 1/2 cup idli rice
  3. 1/2 cup Raw rice
  4. 1/2 cup Urad dal
  5. 1/4 tsp Fenugreek seeds
  6. Salt to taste
  7. Water for grinding
  8. For spicy chutney
  9. 6-7 red chilis
  10. 1 small peice of tamarind
  11. 3 sliced shallots
  12. 6 cloves garlic
  13. 3 tbsp split bengal gram
  14. Salt to taste
  15. 1/2 tsp oil
  16. FOR MASALA
  17. 3 boiled potstoes
  18. 1/2 carrot finely chopped
  19. 1 small cup green peas
  20. 1 onion finely chopped
  21. 2 green chilies finely chopped
  22. 2 garlic finely chopped
  23. 1/4 tsp turmeric powder
  24. 1/2tsp coriander powder
  25. 1/4 tsp chili powder
  26. 1/4 tsp garam masala
  27. 1 spring curry leaves
  28. 2 tbsp Oil
  29. 1/4 tsp mustard seeds
  30. 1/2 tsp split black gram
  31. 1 tbsp chopped coriander leaves

Instructions

  1. Soak rice, split black gram and fenugreek seeds separately for 2 hours.
  2. Grind this into fine paste separately with enough water. The batter should be thick. Add salt and ferment it for 8 hours.
  3. For spicy- tangy chutney
  4. In pan heat oil and add red chilis, split bengal gram,shallots,tamarind and garlic and grind into fine paste.
  5. For masala:-
  6. Heat oil in a pan add mustard seeds, split black gram,curry leaves,chopped onions and garlic till light and pink.
  7. Next add in green chilies and veggies(carrot and green peas) and cook till done.
  8. Add in turmeric powder,corriander powder,salt and garam masala.
  9. Next add in mashed potatoes and chopped coriander leaves.
  10. Now we will make dosa. Heat dosa pan drizzle oil and season the pan.
  11. Spread the batter in circular motion and spread the chutney that we prepared earlier and followed by the masala.
  12. Fold the dosa in triangular shape and serve it with coconut chutney.
