Ingredients Serving: 2

  1. Fenugreek leaves 1 bunch
  2. Potato 1 small
  3. Jackfruit seeds 10
  4. Cherry tomatoes 8 / Tomato 1
  5. Onion chopped 1
  6. Garlic 2 pods
  7. Ginger paste 1/2 tsp
  8. Whole cumin seeds 1/3 tsp
  9. Turmeric powder 1/4 tsp
  10. Chilli Powder 1/2 tsp
  11. Coriander powder 1/2 tsp
  12. Cumin Powder 1/2 Tsp
  13. Garam masala 1/4 tsp
  14. Salt
  15. oil 2 tbsp
  16. Dry Red chilli 1

Instructions

  1. Boil jackfruit seeds in pressure cooker for 4 whistle
  2. Peel and cut in half
  3. Cut potato in cubes
  4. Wash and chop Methi leaves
  5. Cut cherry tomatoes in halves
  6. Heat oil in a nonstick pan
  7. Add whole cumin seeds
  8. Fry potatoes with little salt , keep aside
  9. Now heat oil again
  10. Add dry red chilli
  11. Saute for some time
  12. Add onion , saute until they are brown
  13. Add ginger and garlic
  14. Saute for 3_4 mins
  15. Now add turmeric powder , cumin powder , chilli powder
  16. Add salt
  17. Add 2 tsp water
  18. Add tomato pieces
  19. Saute for some time
  20. Cover and cook it until tomatoes are soft
  21. Now add spinach
  22. Again cover and cook for 3_4 mins
  23. Add jackfruit seeds and fried potatoes
  24. Stir and fry for 5 mins
  25. Add hing
  26. When all the water will be dried up add Garam masala
  27. Switch off gas
