ABOUT Meethi Seviyan (Dry Sweet Vermicelli) RECIPE

Meethi Seviyan or dry sweet vermicelli is a delicious and quick classic Indian dessert, prepared on many festive occasions. Meethi seviyan is a traditional dish which is prepared in the festival of Eid. Seviyan is a perfect dish to be served as a dessert in any festival or special occasion. The traditional Meethi seviyan are enriched with sugar and dry fruits. Meethi seviyan is a lip smacking dish which is prepared by using vermicelli, milk, sugar and dry fruits. Dry sweet vermicelli is a tasty dessert which is easy to make and will be ready in no time and can be garnished by a lot of dry ingredients of your choice. You can easily prepare it at your home. Crush the vermicelli and sauté them in hot oil for 2 minutes. Boil milk and water in another pan, add this mixture to the seviyan and cook till the seviyan absorbs all the water and milk. In the end add raisins nuts and cardamom powder and stir them nicely. Remove it from the flame and garnish it with chopped dry fruits. You can serve the Meethi seviyan hot, warm or chilled.

Ingredients Serving: 2

  1. 2 tablespoon ghee/clarified butter
  2. 1.5 cups roasted and crushed vermicelli/seviyan
  3. 1 Cup water
  4. ½ cup Milk
  5. ½ cup sugar
  6. ¼ teaspoon cardamom powder
  7. 4-5 cashews, sliced thinly/finely chopped
  8. 4-5 almond, sliced thinly/finely chopped
  9. 4-5 pistachio, sliced thinly/finely chopped
  10. 8-10 raisins

Instructions

  1. Crush vermicelli/seviyan with your hand.
  2. Heat ghee in a non-stick pan. When ghee melts, add broken seviyan in it. Saute seviyan in ghee for 2 mins on slow heat.
  3. Meanwhile in another pan, add water and milk and bring it to a boil.
  4. Now add this hot water-milk mixture gradually to the seviyan, stirring continuously.
  5. Cook till seviyan absorbs all the water & milk.
  6. Now add sugar. Mix well. Sugar will release its own moisture. Cook for about 2 minutes or till seviyan absorbs all the excess moisture.
  7. In the end, add raisins, nuts and cardamom powder. Give a quick stir.
  8. Remove from flame. Garnish it with chopped nuts.
  9. You can serve seviyan hot or warm or chilled.
