Carrots Halwa /Gajar Halwa

Ingredients to make Carrots Halwa /Gajar Halwa

  • 1 1/2 Kg Fresh carrots
  • 1 litre pure whole milk
  • 1/2 kg sugar
  • 100 grams Pure ghee as preffered
  • 1 tspn cardamom seeds
  • 2 tblspn full raisins
  • Hand full of cashew split and chopped
  • Some blanched chopped almonds to garnish

How to make Carrots Halwa /Gajar Halwa

  1. Wash peel and grate Carrots fine.
  2. Boil milk in a heavy bottom pot
  3. Now add Grated carrots slowly to this and stir well
  4. Let them cook in milk stirring ocassionaly to check till milk is almost drying up
  5. Add sugar to this mix well
  6. Now heat sum ghee in a deep pan or pot and add crushed cardomom
  7. Transfér the cooked carrots in milk to this and add raisins and cashews splits.
  8. Roast well till it completely and changes color .
  9. Garnish with chopped almonds and serve hot

My Tip:

Dont loose patience stir roast in ghee well. Add some khoya /Mawa as per choice to garnish
