ABOUT Carrots Halwa /Gajar Halwa RECIPE

A north Indian dessert made seasonally mainly in winter.,as the fresh carrots in winter are lovely red in colour and juicy.These grated and cooked till dry in pure milk. Sugar and ghee are added to give the texture .Dry fruit especially raisins added while roasting in ghee along with cardomom

Ingredients Serving: 4

  1. 1 1/2 Kg Fresh Carrots
  2. 1 litre pure whole milk
  3. 1/2 kg Sugar
  4. 100 grams Pure ghee as preffered
  5. 1 tspn cardamom seeds
  6. 2 tblspn full Raisins
  7. Hand full of Cashew split and chopped
  8. Some blanched chopped Almonds to garnish


  1. Wash peel and grate Carrots fine.
  2. Boil milk in a heavy bottom pot
  3. Now add Grated carrots slowly to this and stir well
  4. Let them cook in milk stirring ocassionaly to check till milk is almost drying up
  5. Add sugar to this mix well
  6. Now heat sum ghee in a deep pan or pot and add crushed cardomom
  7. Transfér the cooked carrots in milk to this and add raisins and cashews splits.
  8. Roast well till it completely and changes color .
  9. Garnish with chopped almonds and serve hot
