Lucknowi Sheermal

Ingredients to make Lucknowi Sheermal

  • 2 and 1/2 cup all purpose flour
  • salt 3/4 tsp
  • 2 tsp caster sugar
  • 1/2 cup Milk
  • 2 and 1/2 tsp instant yeast
  • 2 tsp kewra essense
  • 4 tsp butter
  • 3-4 tsp full fat cream
  • 4 tsp milk powder
  • 1 egg
  • 2 tsp fennel seeds
  • 2 tsp kesar threads
  • Luke water ( if needed)
  • Little amount of milk add few saffron threads in it.
  • 1 and 1/2 tsp of sesame seeds (to sprinkle )

How to make Lucknowi Sheermal

  1. First in bowl take milk add Kesar and fennel seeds in it and boil it. Strain it
  2. In other bowl dissolve sugar in lukewarm water and add yeast and leave to rise
  3. Now in other large mixing bowl take all dry ingredients and mix well.
  4. now add all wet ingredients and yeast and again mix well.
  5. In this bowl add saffron and fennel milk in it and make a smooth dough.
  6. all the wet ingridients are sufficent to make dough, you may add more water if needed. Add more sugar if you want sweeter
  7. Keep dough for proofing for atleast 1 and 1/2 hour in a hot place.
  8. when the dough has risen well knead again it, and divide into four equal size ball
  9. now make chapattis of all not so thin, press with fingers and prick with a fork and grease it with saffron and kesar milk and sprinkle sesame seeds over it.
  10. Bake it preheated oven at 190 degrees and bake for 15-20 min in the middle rack, when one side done flip it and bake again for 10 mins.
  11. Serve it with mutton gravy.

My Tip:

Use lukewarm water to knead. Bake in the middle rack
