Love Letter is a traditional tea time snack in Kerala with the sweetness wrapped inside. It has many names to credit other than mentioned in the title. You can call it mutta kuzhalappam, eylanchi, pillow appam or coconut filled crepes.
Such a beautiful snack!
For the batter -
Beat the egg in a medium bowl. Add 2 tablespoons sugar,milk and half a cup water. Mix everything well. Keep aside.
In a large bowl combine all-purpose flour and salt. Add the wet ingredients to this to a make a smooth lump free batter. The batter should be slightly runny. Adjust adding water accordingly.
For the filling -
Heat oil in a pan over medium heat. Add ghee, grated coconut and the remaining sugar. Stir well for 2-3 minutes until sugar is melted and raw flavour of coconut disappears.
Now add the cardamom powder and mix well. Switch off the flame. Allow the filling to cool completely.
For the crepes -
Heat oil in a non stick tava over medium high heat. Pour a ladleful batter and spread using the back of the ladle to form thin circle.
Once the bottom of the crepe is cooked flip over to the other side. Cook until golden brown.
Transfer to a plate. Make similar crepes with the remaining batter. Stack the crepes and allow them to cool.
Now take one crepe and gently spread 2 tablespoons of coconut filling. Fold the crepe like a roll sealing the edges with fingers.
Serve warm with tea and spread the love.
