ABOUT Peshwari Naan RECIPE

Peshwari Naan is one of popular traditional flat breads of india baked in Tandoor. It is a type of naan where it is fully filled with dry fruits like almonds, cashews, dates and raisins.The word naan is derived from persian word nan which means bread. In Afghanistan, Tandoor was used as a community oven where people would come with a dough and nan waee ( naan baker) would bake for some fee. The traditional naans were seen in Teardrop shape. But actually naan got this shape because of slapping a round ball of dough onto the hot surface of outside the oven. Due to the soft pillow kind of dough, the dough would come down and finally tear drop shape would result. This dry fruits naan is very delicious and healthy too. I

Ingredients Serving: 4

  1. Flour-2 cups
  2. Yeast- 1 tsp
  3. Sugar-1 tsp
  4. Milk- 1/2 cup
  5. Curd-1/2 cup
  6. Oil- 1 tbsp
  7. Baking powder- 1/2 tsp
  8. Salt-1 tsp
  9. Warm water-1/4 cup
  10. Almonds- chopped 1/4 cup
  11. Raisins- chopped 1/4 cup
  12. Dates- chopped 1/4 cup
  13. Cashew nuts- chopped 1/4
  14. Melted butter

Instructions

  1. In a glass, add warm water, yeast and sugar. Keep with 15 minutes, we can see a bubbly and frothy mixture.
  2. In a bowl, add flour, salt, baking powder, milk, curd, yeast mixture. The dough will be sticky. So add oil knead the dough gently and cover it with a cloth and and keep in warm place for 2 hours or till it becomes double. Yeast is nothing but microscopic fungi which converts sugar into alcohol and carbon dioxide.. so, it results in a soft and fluffy dough.
  3. After 2 hours, knead the dough with our palm greased and divide into balls.
  4. Flatten the balls with little flour into a big round.
  5. Now add chopped nuts in the middle of the flattened naan.
  6. Close the stuffing from all sides as shown in photo and seal it from all sides.
  7. Now flatten it again in round shape.
  8. If using the oven, use the highest temperature and grill it for 10 min on each side and remove and brush it with butter.
  9. If using stove top method, use iron tawa and when hot, brush one side of naan with little water and place it on tawa
  10. We can see bubbles on one side and now flip and cook. Our naan will be cooked.
  11. Remove it from tawa and brush it with butter.
  12. Cut into slices and enjoy hot dry fruit naan.
