About Peshwari Naan Recipe

Peshwari Naan is one of popular traditional flat breads of india baked in Tandoor. It is a type of naan where it is fully filled with dry fruits like almonds, cashews, dates and raisins. The word naan is derived from persian word nan which means bread. In Afghanistan, Tandoor was used as a community oven where people would come with a dough and nan waee ( naan baker) would bake for some fee. The traditional naans were seen in Teardrop shape. But actually naan got this shape because of slapping a round ball of dough onto the hot surface of outside the oven. Due to the soft pillow kind of dough, the dough would come down and finally tear drop shape would result. This dry fruits naan is very delicious and healthy too. I

Peshwari Naan

Ingredients to make Peshwari Naan

  • flour- 2 cups
  • sugar- 1 tsp
  • yeast- 1 tsp
  • Warm water-1/4 cup
  • Milk-1/2 cup
  • curd- 1/2 cup
  • salt-1 tsp
  • Baking powder- 1/2 tsp
  • oil- 1tbsp
  • Chopped dry fruits like cashew, almonds, dates, raisins.

How to make Peshwari Naan

  1. In a glass add sugar and yeast and warm water. We can see a frothy and bubbly liquid within 15 mins.
  2. In a bowl, add flour, Baking powder, salt , milk, curd, yeast mix and mix well.
  3. Dough will be very sticky. Add little oil and knead gently.
  4. Cover it with a cloth and close with a tight lid and keep in warm place for 2 or 3 hours.( till it doubles)
  5. If we want to skip this yeast, we can use aerated soda water too.
  6. After the dough doubles in size, make into balls. Flatten it with a rolling pin and add chopped dry fruits in the middle of naan and seal it from all sides ( shown in picture).
  7. Now place it in oven in its highest temperature for 5 min utes on both sides and brush it with butter and serve hot.
  8. If using stove top method, take an iron tawa and apply water to one side of naan and place it on tawa.
  9. Once it starts to bubble , then flip tawa on to the flame.
  10. Once done, remove from heat and brush it with butter and serve hot.

My Tip:

Don't add hot water to active yeast. Use just warm water. Don't knead the dough too much, or else the incorporated air inside the dough escapes.
