Carrot Kheer

Ingredients to make Carrot Kheer

  • carrots 6 medium sized - grated
  • sugar 1 cup
  • Milk 1 liter
  • cardamom 6 - 8 powdered
  • cashew pieces 20 - 25
  • raisins 20 - 25
  • ghee 2 tbsps

How to make Carrot Kheer

  1. Cook the grated carrot with 1/4 cup sugar in a cooker
  2. In a thick bottomed vessel, boil the milk with the rest of the sugar
  3. Reduce the flame
  4. Roughly mash/grind the cooked carrot
  5. Add the mashed/ground carrot to the boiling milk and continue to cook on low flame till blended
  6. Remove from heat and add the ground cardamom powder.
  7. Garnish with cashew pieces and raisins fried in ghee
  8. Serve hot or chilled

My Tip:

Makes a fun way to get milk into kids food. Cabbage/lauki kheer can be made similarly
