Ingredients Serving: 6

  1. 1. Fresh Curry leaves - 2 cups
  2. 2. Urad Dal - 2 tbsp
  3. 3. Chana dal - 2 tbsp
  4. 4. Dry red chilli - 8-9 nos
  5. 5. Cumin seeds - 2 tsp
  6. 6. Coriender seeds - 1tbsp
  7. 7. Dry coconut - 1/2 cup grated
  8. 8. Tamarind flakes - 3-4 is enough
  9. 9. Oil - 2tbsp or more
  10. 10. Salt to taste

Instructions

  1. 1. Start up with heating 1tbsp of oil in a pan add Urad-chana Dal (one at a time) and keep toasting to fry them till they nice n aromatic..It will take 4 to 5 minutes on simmer.. Keep Both aside. 2. Next in remaining oil add cumin seeds and coriender seeds only for 2 minutes carefully.. Turne off the heat as they start up to realise their flavours.
  2. 3. Now in the same pan roast the Curry leaves , put just a tsp of oil if needed..Mix by stirring well and fry them till they turn dry n crispy , it will take 5-6 minutes on low flame .. Keep in a dry Bowl. 4. After that add 1/2 Tsp of oil in the pan and fry red chillis , when they nicely done add the tamarind flakes & grated coconut . 5. After adding the coconut immediately turn off the flame, toss it properly to avoid the bottom burns.. rest all the things to cool down completely.
  3. 6. Finally it's time to adding the salt and grind them into a powder, make sure that.. The powder should be nice and refined.. 7. Now the super delicious n spicy Karivepaku Podi or dry Chutney of Curry leaves is ready.. 8. Keep it in a airtight container , you can also store it till one month and enjoy it when ever you like .. in your breakfast or with any meal of the day .. :smiley:
