Ingredients Serving: 4

  1. Maida 2 cups
  2. Wheat flour 1 cup
  3. Finely ground sugar 1 1/2 cups
  4. Dry coconut (finely chopped or grated) 1/4 cup
  5. Raisins (chopped) 2 tablespoons
  6. Milk (to make dough)
  7. Ghee 3/4 cup

Instructions

  1. Take maida and wheat flour in a deep bowl, add ghee to it in batches and mix them properly. The mixture should look like bread crumbs
  2. To check if it's done or not, take the dough in your hand and press to make a ball. If it comes together, it is done.
  3. Now add sugar and milk one by one and make a perfect hard dough.
  4. You may also check the sugar by tasting the dough and also add more according to your taste.
  5. Finally add the coconut and raisins and mix well.
  6. Cover it with a wet cloth and let it sit for 15-20 minutes.
  7. Now heat oil in a heavy bottom pan. Once the pan is hot, turn the gas to slow.
  8. Now divide the dough into small balls and flatten it between your palm
  9. Keep these aside and now add the raw khajoors in the oil one by one.
  10. Cook on low to medium heat so that they get cooked from inside and become crisp on the outside
  11. When the khajoors become brown on one side, flip and cook the other side
  12. It would approximately take 5-8 minutes for one batch to get perfectly cooked.
  13. When done take them out on an absorbent sheet.
  14. Serve when cold
