ABOUT Beetroot Curd Rice RECIPE

Beetroot is a rich source of iron and folic acid. It can help lower blood pressure and help you in your exercise performance. It is recommended specially for women as to keep hemoglobin count in check. Since, it is quite boring to eat it raw, you can prepare this recipes.

Ingredients Serving: 2

  1. 2 cups - cooked rice
  2. 1 - beetroot boiled with skin
  3. Salt to taste
  4. Sugar to taste
  5. 1 cup - thick curd
  6. 1 tbsp - oil or ghee
  7. 1 tsp - mustard seeds
  8. 1 tsp - cumin seeds
  9. 1 tsp - chana dal
  10. 1 tsp - peanuts
  11. 1 tsp - urad dal
  12. few cashews
  13. Curry Leaves - 5
  14. Green chili whole - 1 or 2
  15. Red chili whole - 2 to 3
  16. Chopped coriander leaves
  17. A pinch of hing

Instructions

  1. Soak all the dals for 10 minutes before you start the tempering.
  2. Mix rice and curd together.
  3. Add hing, curry leaves and soaked dals and peanuts
  4. Add mustard seeds, cumin seeds and let it splutter.
  5. Add cashew , green chili, red chili.
  6. Add chopped or grated beetroot.
  7. Add the tempering to rice and curd mixture.
  8. Add salt and sugar to taste
  9. Garnish with chopped coriander leaves
