Rabdi Malpua

Ingredients to make Rabdi Malpua

  • For malpua -
  • MIlk 2 cup
  • maida 200 gm
  • Khoya 200 gm
  • sugar 300 gm
  • saffron few strands( optional)
  • Desi ghee for frying
  • cardamom 3 to 4 (ground)
  • pistachios 10 to 15 (chopped)
  • For rabdi -
  • 1 kg milk
  • few almonds and pistacios chopped
  • sugar 3 tablespoon
  • Few drops rose essence
  • 1 teaspoon green cardamom powder

How to make Rabdi Malpua

  1. For malpua, boil milk till it gets reduced
  2. Mix grated khoya in it leave it for some time
  3. Then add maida to it and mix well
  4. Avoid formation of lumps
  5. Leave it for an hour
  6. after an hour heat ghee in a pan
  7. Now pour one big spoon of mixture into it making a round shape
  8. Fry till light brown
  9. Now take a pan and put equal amount of sugar and water into it
  10. Add 1 tbsp of milk and take off the foam with a spoon when formed
  11. Cook for five to ten minutes on low heat
  12. Strain it and add kesar and cardamom to it
  13. For rabdi -
  14. Heat the milk in a pan
  15. Bring it to a boil
  16. Cook it on a low flame till it becomes thick and creamy
  17. Stir and cook till the quantity is reduced. Add sugar
  18. Add rose essence, garnish with pistachios and almonds
  19. Now take malpuas and dip it in sugar syrup
  20. Garnish with saffron and pistachios
  21. Serve hot with rabdi

We can serve malpuas with kheer
