Ingredients Serving: 6

  1. For Chenna -
  2. Milk 500 ml
  3. Lemon juice 2 tbsp
  4. Vinegar 1 tsp
  5. Cornflour 2 tbsp
  6. For Syrup -
  7. Sugar 1 cup
  8. Water 4 cups
  9. For Masala Doodh/Flavoured Milk -
  10. Milk 300 ml
  11. Sugar 5 Tbsp
  12. Kesar strands 1 tbsp
  13. Almonds, Pista 1 Tbsp

Instructions

  1. Boil milk in a heavy bottom pan. Once it boils, add lemon juice and vinegar. Stir continuously till it curdles. Once the milk solids separate, drain it
  2. After you drain it, rinse under cold water to remove any traces of vinegar or lemon juice. Keep aside to cool for at least 10 Mins
  3. Once the water completely drains out, in a big plate take the chenna, add 2 tsp of cornflour and knead for exact 10 mins. Make sure you knead only for 10 mins. This step is very crucial.
  4. After kneading for 10 mins, roll them into small balls. This should make 10-16 balls
  5. While you are rolling the balls, make the sugar syrup. Let it boil. Once the sugar syrup boils, add the chenna balls and cook for 20-25 mins or until the balls double in size.
  6. Meanwhile, prepare the Masala Doodh/Flavoured Milk. In a heavy bottom pan, heat milk till it boils completely. Add kesar, cardamom, Almonds and pistachios. Give it a good 20 min boil or until the milk thickens.
  7. Remove it from flame, and squeeze the chenna balls and drop them into the milk. Do not stir or mix. These are very delicate.
  8. Serve chilled
