ABOUT Shahi Tukra RECIPE

Shahi tukra is a royal and exotic dessert made with fried bread in ghee, evaporated milk with dry fruits, saffron and cardamoms.Shahi means royal and tukra means piece. Its origin can be traced back to the Mughal period.Here is a step by step procedure for making this easy but delightful and yummy chilled dessert.

Ingredients Serving: 4

  1. Milk- 1 liter
  2. Sugar-1 cup
  3. Elachi- 3 ( powdered)
  4. Bread- 6 slices
  5. Saffron- few strands
  6. Pistachios, almonds- 1/4 cup (sliced)
  7. Raisins - few
  8. Almond essence or any essence of choice 3 drops
  9. Yellow colour- a pinch

Instructions

  1. In a pan boil milk, sugar and boil in very slow flame.
  2. Keep scraping off the creamy layers back to the milk which is boiling.
  3. Continue till it reaches a thick consistency
  4. This is called rabri. ( we can do this ahead and keep ready in our refrigerator).
  5. Take 6 bread slices and cut them diagonally which gives us 12 triangles.
  6. Fry then in non stick pan with ghee.
  7. To give a caramelized colour, i sprinkled little sugar to get golden colour.
  8. Now arrange them in a serving dish and add raisins, pour rabdi over the bread slices .
  9. Keep in refrigerator and serve chilled
