ABOUT Oladi - Russian Pancakes RECIPE

Russian cuisine have two different pancakes, blini and oladi. Blini are typically thin, like crepes and oladi are thick, puffy pancakes. Some use yeast to make Oladi but I stuck with an easy way of making Oladi.

Ingredients Serving: 4

  1. 2 cups - All purpose flour
  2. 2 - Eggs
  3. 1 tsp - Baking powder
  4. 3 tbsp - Sugar
  5. 2 cups - Buttermilk
  6. 1/4 tsp - Salt
  7. Oil for frying

Instructions

  1. Beat the eggs, sugar, salt and slowly add the buttermilk. Whisk well. Add the flour, baking powder to get a thick batter.
  2. Heat a pan with enough oil, with a ladle drop enough batter on the hot pan. Cook on medium heat, flip the Oladi and cook the other side also.
  3. Repeat the same process until the batter gets finished. Serve the Oladi warm with jam or else with sour cream.
