ABOUT Basundi RECIPE

Basundi is one of the healthiest traditional Indian desserts of Gujarat and Maharashtra. It is similar to north Indian dessert Rabri, but the difference is that rabri has very hard flaky layers of clotted cream called malai whereas Basundi has very soft and fine flakes, which are very fine heat coagulated protein particles. T Here is the simple recipe.

Ingredients Serving: 6

  1. Milk- 1 litre
  2. Sugar- 1 cup
  3. Condensed milk- 1 cup
  4. Chopped almonds, pistachio, cashews ( roasted)
  5. Chirongi and melon seeds
  6. Vanilla essence- 2 drops
  7. Elachi- 3 ( powdered)

Instructions

  1. Boil milk
  2. Add sugar, condensed milk, elachi powder and keep stirring in very slow flame
  3. When the mixture is thick but still in liquid form, add chopped nuts, chirongi seeds and melon seeds.
  4. Remove from heat and keep it in refrigerator till we are ready to serve
