Ghee Rice

ABOUT Ghee Rice RECIPE

Ghee rice is a very simple and easy dish that wouldn't take too much time. It is perfect to be had with vegetable or chicken stew, egg curry or any spicy gravy. If you want to make biriyani, make this ghee rice first and then mix with the masala in layers, and cook on dum.

Ingredients Serving: 5

  1. Basmati rice or Jeera rice 3 cups
  2. Ghee 1/4 cup
  3. Coconut oil 1/4 cup
  4. Onion (thinly sliced) 1
  5. Water 6 cups
  6. Cardamom 4
  7. Cloves 4
  8. Black pepper balls 4
  9. Cinnamon 1 inch piece
  10. Bay leaf 1 small piece
  11. Salt 2 tsp
  12. Raiains 2 tbsp
  13. Cashew nuts (split) 2 tbsp

Instructions

  1. Wash the rice and allow it to drain on a sieve.
  2. Meanwhile, keep the water for boiling.
  3. Heat ghee (keeping aside 2 tbsp for frying the dry fruits later) and oil in another pan.
  4. Add the whole spices, that is, cardamom, cinnamon, cloves, bay leaf, and black pepper balls and saute for a minute.
  5. Next, add in half of the sliced onions and fry until they turn golden brown.
  6. Next add the drained rice and saute.
  7. Keep sauting until the rice turns shiny and crisp (you may test with one grain. If it breaks easily that means it is done).
  8. Once done, simmer.
  9. The water kept for boiling would also have started to boil.
  10. Add the piping hot water into the pan with the rice. You would get a nice sizzling sound.
  11. Add in salt and mix well.
  12. Turn the flame to high and cook covered on high for the first two minutes (lid closed).
  13. Then turn the flame to medium low and stir in between. Continue to cook with lid closed.
  14. Check the salt levels and add more if required.
  15. Check after 4-5 minutes, until all water is evaporated and the rice is perfectly done. Once done, switch the flame off.
  16. Heat the remaining ghee in a pan and fry the left over onion slices, raisins and cashew nuts, until they turn golden brown.
  17. Garnish your ghee rice with the fried onions and dry fruits and serve hot with spicy chicken curry or vegetable stew.
