ABOUT Chole Bhature RECIPE

An iconic North Indian delicacy that can truly be described as "Soul food" for it satiates both the tummy and the heart. Who can resist plumpy, crunchy Bhatures dunked in spicy, hot Chole with a slice of onion sprinkled with fresh lime?

Ingredients Serving: 6

  1. For Bhature- 2 cups Maida
  2. 1/2 cup curd ( Use as per needed to knead a soft dough )
  3. Salt to taste
  4. 1 Teaspoon oil
  5. For Chole- 2 cups Kabuli Chana
  6. 2 big onions, sliced
  7. 2 tomatoes, chopped
  8. 1 green chilli
  9. 1 teaspoon ginger garlic paste
  10. 1 teaspoon red chilli powder
  11. 1 teaspoon jeera powder
  12. 1 teaspoon dhania powder
  13. 1 teaspoon garam masala powder
  14. 1/2 teaspoon haldi
  15. 1 teaspoon chole masala
  16. Salt to taste
  17. Water as needed
  18. Oil for Deep frying
  19. To serve- lemon slices and onion roundels

Instructions

  1. Chole Recipe-Soak 2 cups chole overnight.
  2. Next morning add salt, 1/2 teaspoon red chilli powder, 1/4 teaspoon haldi, 1/2 teaspoon garam masala to them.
  3. Boil them in a pressure cooker in 4-5 cups of water for 3 whistles on full flame.
  4. They will become soft and cooked to 95 %.
  5. To make the gravy, heat 2 tablespoon oil in a pressure cooker.
  6. Add in the sliced onion.
  7. Let cook on slow flame for about 10 minutes till golden brown. Stir occasionally.
  8. Add in dry masalas like 1 teaspoon jeera powder ,salt, 1 teaspoon dhania powder, 1/2 teaspoon garam masala, 1/2 teaspoon red chilli powder, 1 teaspoon chole masala and 1 teaspoon ginger garlic paste.
  9. Fry for 1 minute and add in the tomatoes and green.chilli.
  10. Cook till the tomatoes look done.
  11. Add in 1 cup water.
  12. Pressure cook for 1 whistle on full flame.
  13. After the pressure is removed , blend the gravy with a hand blender.
  14. It will look like this.
  15. Add in the boiled chole and keep on slow flame to fry a bit for about 10 minutes with a lid on.
  16. Add in 1 cup water and pressure cook for 1 whistle so that the chole take in all the flavors of the gravy.
  17. Let the pressure remove on its own and The chole are ready to be served.
  18. Bhature Method- Take the maida , curd, salt to taste and 1 teaspoon oil in a big bowl.
  19. Knead to a soft dough.
  20. Let it stand undisturbed for about 3 hours ( in summers ) or 5 hours ( In winters ) till it swells up quite a bit.
  21. Heat oil in a pan to fry the Bhature.
  22. Meanwhile, take a small ball of dough and roll just like we do for rotis / Puris.
  23. Use flour to dust while rolling as the dough will be quite soft.
  24. Fry them on low to medium heat.
  25. Press with a slotted spoon so that the Bhatura plumps and swells up.
  26. Fry till both sides turn golden brown.
  27. Remove on tissue paper so that excess oil is removed. Serve hot.
