ABOUT Carrot Payasam Or Gajar Kheer RECIPE

There are a lot of variations in the method of preparation for Carrot Payasam. I have used custard powder for thickness . Milkmaid can be used too . This recipe is quite similar to the most famous Indian dessert 'gajar halwa' but this is in the form of payasam.

Ingredients Serving: 4

  1. Carrots (medium) 4
  2. Milk 1 litre
  3. Sugar 4 tablespoon
  4. Custard powder (vanilla) 1 and 1/2 tablespoon
  5. Ghee 4 tablespoon
  6. Cashew and raisin for garnishing

Instructions

  1. Wash carrots, trim the edges and peel off the skins.
  2. Grate and keep aside.
  3. Heat ghee in a heavy bottomed pan over medium flame.
  4. Shallow fry cashew nuts and raisins separately, transfer them to a plate.
  5. In the same pan, add the grated carrots.
  6. Stir them continuously and cook for 4 to 5 minutes.
  7. Now add milk and cook on medium flame, stirring continuously for 5 to 10 mins or till the milk reduces slightly.
  8. Next add sugar and mix well.
  9. Stir for 1 to 2 minutes.
  10. In a small bowl, dissolve custard powder with 3 tablespoon milk completely.
  11. Add it to carrot-milk mixture, stir well and cook for 1 minute more or till the mixture thickens.
  12. Turn off the flame.
  13. Transfer to a serving bowl and garnish with cashew nuts and raisins.
  14. Serve this delicious carrot payasam or gajar kheer warm or chilled
