Shahi Kulfi

Ingredients to make Shahi Kulfi

  • Full fat milk 1 liter
  • cream 1 cup
  • Condensed milk 400 ml( whole tin)
  • Milk powder 1/2 cup
  • 2 tbsp milk with pinch of kesar soaked in it
  • 1/4 cup sugar ( optional )
  • Dry fruits chopped 1 cup ( almonds pistas cashews)
  • Unsweetened khoya 1/4 cup (optional)

How to make Shahi Kulfi

  1. Heat milk in a heavy bottomed pan.
  2. Reduce it for 10 mins
  3. Add milk powder
  4. Add condensed milk
  5. Cook for 10 mins
  6. Add cream
  7. Cook for 10 mins stirring continuously to avoid sticking
  8. Add kesar
  9. Cook on medium flame till mix thickens and sticks at the back of the spoon
  10. Add dry fruits and mawa at this stage. Let it cool
  11. Place in containers or kulhads
  12. Freeze for 6 to 8 hours
  13. Take 2 mins before serving
  14. Slice and serve
  15. Can be served with different syrups like rose or khus or falooda

My Tip:

Tastes yummy with rose syrup, chia seeds and falooda
