Citrus Sunset Cake

Ingredients to make Citrus Sunset Cake

  • 858g all-purpose flour
  • 530g caster (superfine) sugar
  • 1 tsp salt
  • 6 tsp baking powder
  • 750 ml milk
  • 250 ml vegetable oil
  • 250g unsalted butter, softened
  • 4 tbsp Greek yogurt (can substitute with sour cream)
  • 2 tsp vanilla extract
  • 4 large eggs
  • zest of 1 orange
  • Zest of 1 lime
  • 400g lemon curd
  • Frosting -
  • 1kg softened unsalted butter (room temperature)
  • 1.5 kg soft icing sugar mixture (sifted after its weighed)
  • 4 tbsp milk (room temperature)
  • 2 tsp vanilla extract
  • 3 drops yellow food dye + 1 tbsp lemon curd
  • 3 drops orange food dye + 1 tbsp lemon curd
  • 3 drops pink food dye + 1 tbsp lemon curd
  • 3 drops red food dye + 1 tbsp lemon curd
  • 3 drops purple food dye + 1 tbsp lemon curd

How to make Citrus Sunset Cake

  1. Combine the flour, baking powder and salt in a bowl.
  2. In a separate bowl, beat the butter with an electric mixer until pale and fluffy. Add the sugar and mix until combined. Add the vanilla extract and eggs and beat until combined.
  3. Add the dry ingredients in 2 additions, alternating with the milk. Then add the sprinkles and mix until just combined.
  4. Divide into 2 greased 9-inch round cake pans and bake at 350F for 20-25 minutes, or until fully cooked. Cool completely.
  5. Apply frosting of different colours around the cake starting from the base. Then spread it throughout whole cake.
