Ingredients to make Chenar Pulao / Chenar Jarda

  • paneer 150 gms (made from 1 litre low fat milk )
  • Orange colour a drop
  • Corn flour 1/2 tbsp
  • Milk powder 1/2 tbsp
  • flour 1/2 tbsp
  • sugar 1 tsp
  • ghee 1 tsp
  • For sugar Syrup :
  • sugar 1 cup
  • water 1 1/2 cups
  • Green cardamom 2
  • cinnamon stick 1/2 inch
  • lemon juice 1 tsp
  • oil for frying

How to make Chenar Pulao / Chenar Jarda

  1. Boil water and sugar
  2. Simmer for 5 mins
  3. Add cardamom and cinnamon
  4. Also add lemon juice
  5. Cover the syrup
  6. Now mix chena , corn flour , flour and milk powder
  7. Also add sugar
  8. Knead a dough
  9. Make three parts
  10. Add 1 drop orange colour in 1 part
  11. Make small 6-7 balls from one part.
  12. Heat oil
  13. Fry the small balls until red
  14. Add them to the hot sugar syrup
  15. Cover for 7- 8 mins
  16. Now using grater grate orange paneer dough and fry them in low heat , don't make them crispy
  17. Fry in batches
  18. Next grate the white paneer dough and fry them
  19. Add them together to the hot sugar syrup for 7-8 mins
  20. Strain them
  21. Spread in a plate
  22. Garnish with star anise
  23. Let them come to the room temperature and serve
  24. Enjoy this colourful dessert on holi

My Tip:

You can make it plain also , if you don't want to use colour that's also fine.
