Ingredients to make Ras Malai

  • For malai -
  • paneer from 1 liter milk
  • 1/2 tsp rawa
  • 1/2 tsp cornflour
  • 2 cups sugar
  • 6 cups water
  • For ras -
  • 1&1/2 liter full fat milk
  • 3/4 cup sugar
  • Pinch of saffron
  • 2 tbsp grated pistachios

How to make Ras Malai

  1. Make paneer from 1-litre milk and keep in a refrigerator for half an hour. Add corn flour and semolina in the paneer and mix well. Knead it to make a smooth paste.
  2. Make 15 equal portions and make flat tikkis. Boil 6 cups water and 2 cups sugar. Boil on fast flame till sugar dissolves.
  3. Add malai in the syrup and boil for 5 mins . After 5 mins cover half with the lid and cook for 10 mins
  4. Now again boil for 5 mins without lid. Turn off the flame and keep the malai in the syrup for 5-6 hours.
  5. For Ras - Boil 1 litre milk with sugar added till it reduces to half. After it is reduced to half add saffron and pistachio and cool it in refrigerator for 3-4 hours.
  6. To assemble- Take malai out from sugar syrup and add it in boiling water for 10 mins. Squeeze the malai and add it in the Ras.
  7. Add pistachio before serving. Serve chilled.

My Tip:

Paneer should be soft for a perfect result. Paneer should be made from cow's milk.
