Date blondies are healthy and tasty and very addictive.

Ingredients Serving: 4

  1. 1/2 cup almond flour
  2. ½ cup whole wheat flour
  3. 1/2 tsp salt
  4. 1 cup organic brown sugar
  5. ½ cup apple sauce
  6. 2 eggs
  7. 2 tsps vanilla extract
  8. 1/2 cup chopped dates

Instructions

  1. Preheat the oven to 180 degrees C and grease a square cake pan.
  2. In a bowl, whisk together almond flour, whole wheat flour and salt.
  3. In another bowl, cream the applesauce and sugar until light in colour.
  4. Add the egg and vanilla extract. Beat well.
  5. Fold in the flour mixture into the wet ingredients. Add 3/4 of the dates and mix well.
  6. Pour the batter into the pan and spread evenly. Add the remaining dates over it.
  7. Bake for 30 minutes or until a toothpick inserted comes out clean. Allow to cool. Cut into squares or rectangles and serve.
