Ingredients to make Lemon Mint Shots

  • 2 tbsp lemon juice
  • ½ cup agave nectar
  • 4 tbsp lemon zest
  • 1 egg
  • 1 tsp vanilla extract
  • mint, a handful
  • ¼ cup crushed digestive biscuits
  • 1 tsp canola oil

How to make Lemon Mint Shots

  1. In a small sauce pan, over medium heat, dissolve the agave nectar and lemon juice. Add zest.
  2. Beat the egg in a small bowl. Whisking continuously, gradually pour the lemon mixture into the egg. Beat well and transfer back to the pan.
  3. Keep stirring constantly on low flame until it starts to bubble. Remove from heat and stir in vanilla and mint. Transfer to a bowl to cool.
  4. Crush the digestive biscuits with a rolling pin. Mix the biscuits and oil together. Press into the shot glasses.
  5. Pour the lemon curd mixture and refrigerate for 2 hours to set.
