Biriyani For Beginners

ABOUT Biriyani For Beginners RECIPE

Presenting Chicken Biriyani the basic simplest way and with basic ingredients.

Ingredients Serving: 4

  1. Basmati rice. 1 cup( i take 1 handful / person + 1 handful extra).
  2. Chicken 1 kg ( with bones). If using chicken breast than 750 grams.
  3. Onion 500 grams.
  4. Garlic crushed 4 tsp
  5. Ginger grated 1 tbsp
  6. Ghee 1 tbsp
  7. Oil 1 tbsp
  8. Curd 2 tbsp
  9. Khada masala ( cinnamon, cardemom, peppercorns, bay leaves, badi elaichi etc.)
  10. Salt, chilli powder, garam masala, turmeric to taste.
  11. Fresh cream ( malai) 1 tbsp
  12. Coriander leaves finely chopped 2 tbsp
  13. Boiled eggs for garnishing 3 to 4

Instructions

  1. Wash and soak rice for half an hour.
  2. Wash chicken ( i have used chicken drumsticks)
  3. Apply 1 tsp garlic, 1 tsp ginger, salt, turmeric and curd and keep for marination for 45 minutes
  4. Now after half an hour heat ghee in a big kadhai and add all khada masala
  5. After it splitters take out few for grinding in mortar and pastle and add Rice to the ghee.
  6. Saute for 5 minutes or let it be little brown and than add hot water to it. Add salt and cook covered.
  7. Simultaneously pressure cook chicken for 5 to 6 whistles. Let it cool and than make pieces.
  8. Chop the onions big.
  9. Heat oil in the pan and saute onions. ( keep few for garnishing).
  10. Add all masala and the ground khada masala too
  11. After it sauted well add chicken
  12. Add little clear soup too as we don't want very dry chicken.
  13. After mixing well add fresh cream ( malai) and few coriander leaves chopped.
  14. Now mix with rice.
  15. Mix everything and let it cook for some time keeping covered. Put a iron tawa under the kadhai to avoid burning.
  16. Now chop the eggs and sprinkle salt. Fry them in oil.
  17. Fry the chopped onions too
  18. Garnish your Biriyani with fried Onions, fried Eggs and Coriander leaves
  19. Serve with your favorite Raita.
