ABOUT Sweet Puris (Paakatlya Purya) RECIPE

Pakatlya Purya literally means Puris soaked in sugar syrup. This traditional Maharashtrian recipe is prepared on festive occasions.

Ingredients Serving: 4

  1. For Puri batter : 1/2 cup - Rawa (Semolina)
  2. 1/2 cup - Maida (Refined flour)
  3. 2 tbsp - ghee
  4. 2 to 3 tbsp - sour curd
  5. Salt to taste
  6. For Syrup : 1 cup - sugar
  7. 1/2 cup - water
  8. 1 - lemons juice
  9. 2 tbsp - Saffron-Cardamom Syrup/Powder
  10. For frying : Ghee (Or vegetable oil) as required
  11. For Garnishing : Saffron strands
  12. Almond flakes

Instructions

  1. To make the dough: Take Semolina and all-purpose-flour (maida) in a mixing bowl. Add salt to taste. Then pour hot ghee (Moain) in the flour.
  2. Make the dough: Mix semolina, salt and flour together. Pour hot ghee into the flour. Knead into a tight dough with sour curd. Keep aside for 1 hour.
  3. In a saucepan heat 1 cup sugar and half cup water. Boil till you get a one-string consistency. Turn off heat. Add lemon juice and saffron-cardamom syrup.
  4. Make 18-20 small balls of the dough. Take each ball on a roller and roll it into flat circles (puris).
  5. Heat ghee/oil in a pan on high flame and fry till they are light brown in colour. Dip them immediately into the sugar syrup making sure you coat both sides.
  6. Garnish the syrup-coated puris with saffron strands and almond flakes.
  7. Transfer it into an air-tight container and store them for 3-4 days.
