Cream of Mushroom Soup

Ingredients to make Cream of Mushroom Soup

  • mushrooms 200g
  • onion chopped 1/2cup
  • garlic chopped 1tsp
  • Milk 2 cups
  • water or stock 2 cups
  • Butter2tbsp
  • oil 1tsp
  • salt to taste
  • Black pepper 1/2 tsp
  • Corn flour 2tbsp mix with 1/4 cup cold water
  • Cream2 tbsp

How to make Cream of Mushroom Soup

  1. Wash and chop mushrooms. Heat one tsp oil in a pan add mushrooms sauté for a while. Remove and keep aside. In the same pan add remaining oil and butter add garlic and onion sauté till translucent. Do not get it brown.
  2. Add mushrooms keep one tbsp aside.Stir for a minute. Add water or stock. Cook for 10-15 minutes or pressure cook for one whistle. Let the steam release itself. Blend with hand blender.
  3. Add milk and further put on slow fire. Add corn flour and remaining mushrooms. Mix cream and adjust seasoning.Remove and serve hot.
