ABOUT Banana Caramel Fudge Cups RECIPE

Bananas and salted caramel is a match made in heaven. These banana salted caramel fudge cups topped with walnuts are a perfect epitome of this fact. This is a quite simple recipe but yields utterly delicious sweet little fudge cups.

Ingredients Serving: 8

  1. For the Bottom banana layer:
  2. Ripe bananas - 4
  3. Condensed milk - 125 gm (almost 1/3 of a 400 gm tin)
  4. Vanilla essence - 1 tsp
  5. For the Top salted caramel layer:
  6. Sugar - 1 cup
  7. Butter - 50 gm
  8. Fresh cream - 1 cup
  9. Condensed milk - 1/4 cup
  10. Salt - 3/4 tsp
  11. Walnuts (Finely chopped) - 2 tbsp

Instructions

  1. Keep the cup cake moulds greased and ready.
  2. Add little chopped walnuts to each of the mould.
  3. Take sugar in a pan and heat it.
  4. In another pan keep the fresh cream and condensed milk to warm a little.
  5. When the sides of the sugar in the pan begin to change the color to brown, stir slightly, so that the coloring is uniform.
  6. Once all the sugar melts and becomes golden brown in color, remove from flame and add in butter.
  7. Swirl the pan until butter melts.
  8. Now add in the cream mixture and salt.
  9. Mix well.
  10. Now put the pan with caramel back on flame and cook for another minute and switch the flame off.
  11. Add about 2 tbsp of the caramel to the prepared cup cake moulds.
  12. Grind the bananas to form a smooth puree.
  13. Now in another non-stick pan, mix the pureed bananas, condensed milk and vanilla essence.
  14. Switch the flame on and cook the banana by stirring continuously until the edges comes off the sides of the pan.
  15. Switch the flame off.
  16. Now add 2 tbsp of the banana fudge mixture on top of the caramel layer.
  17. Press with the back of a greased spoon to level the surface.
  18. Once it cools down, refrigerate for 2-3 hours.
  19. Then carefully take them out from the moulds.
  20. Delicious and melt-in-the mouth banana salted caramel fudges are ready to be served.
